- Ceramic: is good at retaining heat, so it cools down less quickly. You can heat ceramic in the oven, scratch-resistant and very easy to clean under the tap. Ceramic is less suitable for the dishwasher and you cannot sauté or burn with it.
- Stainless steel: durable material that can take a beating. Cheap to make and suitable for sautéing or searing meat. Suitable for the oven, refrigerator and freezer. If you buy an inner pan with stainless steel do choose a ceramic non-stick coating, otherwise cleaning will be a hell of a chore.
